Linnea is an experienced baker, pastry chef and cold cook with a broad background from both large and small businesses - such as Sundbyholm Castle, Elite Stadshotellet and Mary's Café, where she has also been kitchen manager. In addition to her passion for baking, Linnea has also previously worked as a farmer and racehorse keeper, a combination that reflects her deep roots in craftsmanship and nature.

When the restaurant manager at Gripsholms Värdshus contacted Linnea to recruit her, it was precisely her solid knowledge and experience that made her the obvious choice.

Growing and develop together

According to Linnea, the best thing about her job as manager of the bakery and Schweizeriet is the trust she has gained from the owners and managers. It has given her the opportunity to develop the business while growing as a person. Her leadership style is characterized by security, communication and respect - and she emphasizes the importance of having fun together. Listening to each other, bouncing ideas off each other and daring to try new things is crucial to creating a creative and strong team.

Baking with love and tradition

Linnea sees baking as a genuine craft where everything is made from scratch, with great care and love. Gripsholms Värdshus suits her rustic romantic style perfectly, and the historic setting inspires her to create classic pastries and traditional artisan bread. She draws inspiration from social media, baking books and talented colleagues in the industry.

Local ingredients are a given in Linnea's philosophy. She works with apples, rhubarb and berries from the area, as well as flour from Strängnäs, Saltå Kvarn and Warbro Kvarn. Only Swedish dairy products are used - a tribute to Swedish farmers and sustainable food culture.
