The smell of freshly baked bread spreads through the inn. In the bakery, Linnea and Bea work early in the morning, with flour on their hands and love in every dough. Here, bread and pastries are baked from local ingredients, carefully selected for their quality and taste.
Take home a freshly baked loaf of bread and enjoy a slow morning in peace and quiet - or stay in and enjoy a delicious hotel breakfast where the bread is served freshly baked, just as it should be.

For those living in Mariefred or visiting the town, our bakery and patisserie is an obvious destination for freshly baked bread and delicious pastries - whether you want to take something home or enjoy a moment of relaxation on site.
Baked with care
A craft and a story behind every loaf...
- Värdshuslimpa, a light sourdough bread made with wheat flour and durum wheat flour from Saltå Kvarn. The inn is Sweden's oldest, dating back to 1609. Over the centuries, the inn has been visited by everyone from kings and jesters to farmers and other travelers. The inn was reopened in 1989 after extensive renovation.
- The monk's favorite, a rustic sourdough loaf made with spelt sourdough, wheat flour, and coarse rye flour from Saltå Mill. In 1490, two Carthusian monks visited Bishop Rogge in Strängnäs. They asked for land to build a monastery. The bishop then turned to Sweden's regent, Sten Sture the Younger, who donated the land around the hill where the church is located today. The monastery was built in 1493. The Carthusian monks had taken a vow of silence that could only be broken during Sunday high mass. The monks devoted themselves to the art of healing and cultivated their medicinal herbs at the monastery.
- Klosterbröd, a dark rye bread made with rye sourdough, crushed rye from Warbro mill, sunflower seeds, flax seeds, and fine rye flour from Saltå mill. The inn stands on the foundations of the Carthusian monastery. When the inn was being extended in 1987, the remains of the old monastery's foundation walls were found. Some of the finds made at that time have been reused as interior decoration in the inn. The monastery, Pax Mariæ – meaning Mary's peace – gave the town of Mariefred its name. The monastery was dissolved in the 1520s.
- Åströms bread, here we vary between our oat loaf with roasted oatmeal and flax seeds and our loaf baked with coffee-cooked crushed rye. Svenska Kulturpärlor is owned and run by the Åström family. Since the mid-1980s, this family has been working to develop tourist destinations in Sörmland. Today, Fredrik Åström is the CEO of the company that runs several gems in Sörmland – Dufweholm Manor outside Katrineholm, Södertuna Castle outside Gnesta, and Gripsholm värdshus Bed & Breakfast in Mariefred. Fredrik has had a keen interest in history since childhood. This interest is reflected in all of the "gems," where you are met with historical charm and beautiful things.
- PAX bread roll, a light and fluffy sourdough roll made from wheat flour and durum wheat flour from Saltå Mill. In 1987, extensive renovation of the inn began. During the excavations that were carried out at that time, the foundation walls of the Carthusian monastery Pax Mariæ – Mary's Peace – were found, which gave the town of Mariefred its name. The fact that the monastery walls extended under the inn was sensational. Previously, it was believed that the current church was built on the monastery walls.
- Smockska rolls: we vary between our oat rolls with roasted oatmeal and flax seeds and our rolls baked with coffee-cooked rye crumbs. In the early 17th century, it was the bourgeoisie in the city who were obliged to provide travelers with food and lodging. They were allowed to charge the travelers for this. However, this did not apply if the traveler was employed by the court. As King Charles IX often stayed at Gripsholm Castle with a large entourage that was accommodated by the bourgeoisie, it became expensive. In early 1609, wild protests broke out among the town's bourgeoisie, resulting in a letter of privilege being issued on February 13, 1609, for the first innkeeper in Mariefred. His name was Joacim Smock, a German burgher who had previously run a tavern in Stockholm. The Smock Room in the inn is named after him, the first in a long line of innkeepers since then.

Gripsholms Schweizeri
A "schweizeri" is a historical term for a charming café or pastry shop, often serving food in a cozy and relaxed atmosphere. The word dates back to the 19th century, when "schweizeris" became popular meeting places where people enjoyed coffee, pastries and simple meals.
